Pumpkin spiced oatmeal!
This recipe is a delicious way to start off fall. To get my mind off of warm summer days ending and crisp cold ones beginning I need to get myself excited with fun little fall treats. This recipe is simple, healthy and can be modified to fit your taste (or what you have in the kitchen.)
1 packet Glutenfreeda brand oatmeal (steel cut oats are fine if you aren’t GF)
1 cup water
1/2 cup 100% pure pumpkin puree canned
1/4 cup almond milk (unsweetened)
1 packet Truvia sweetner
1/4 tsp cinnamon
1/4 tsp pumpkin pie spice
1 tablespoon unsweetened organic coconut shavings
-Microwave oatmeal and 1 cup water in a bowl for one minute and 30 seconds. Take bowl out and stir.
-Add pumpkin puree and almond milk and stir.
-Add truvia, cinnamon, and pumpkin pie spice. Season to taste.
- Portion out half into another bowl or tupperware because the recipe makes 2 servings.
-Sprinkle your oatmeal with coconut shavings.
